Beef + Beetroot Curry

The best thing about the cooler weather is comfort food... oh and not having to shave. This curry should be enjoyed to boost fertility and throughout your pregnancy. It is really high in folate, iron, selenium, zinc and protein. These nutrients are the building blocks of a fertile body and a healthy pregnancy so load up.  

Ingredients

Beef and Beetroot Curry

500g organic diced beef (use a cheap cut like blade, chuck or oyster)

350g beetroot, grated

3 tbsp coconut oil

2 large tomatoes

1 red onion, diced

3 cloves of garlic, crushed

1 tsp ginger, grated

1 tsp chili powder

2 tsp ground cumin

2 tsp ground cinnamon

1 tsp coriander seeds

3 cardamon pods, crushed

To serve

1 lime

1 bunch coriander

3 cups basmati rice, cooked (approx. ½ cup per serve)

Method

In a large pan, heat oil and spices (except chili powder) until oil starts to sizzle, then add onion and cook until golden.

Add garlic and ginger, and a little water if necessary and cook for 1 minute, then add tomatoes until softened.

Add 1 tsp salt, chili powder and beef and seal on all sides. Reduce the heat, pop the lid on and cook for 10 minutes.

Then turn up the heat while you add the beetroot and stir fry until softened. Reduce the heat, pop the lid on and cook for 1 hour 15 mins or until beef is tender. Check on it from time to time and add water when necessary.

Serve with basmati rice and fresh coriander and lime and a side of greens or a simple veggie curry.
