Roast Carrot Hummus with cucumber sticks

This is delicious on its own with veggie sticks, on toast or with cheese and crackers. It also makes a great lunch, just pair it with some protein like boiled eggs, tuna or ham, sliced tomato and a handful of greens. Mmmm…

Ingredients

4 large organic carrots, chopped

1 tbsp coconut oil

1 tsp cumin, ground

1 tsp coriander, ground

½ tsp paprika

Salt & pepper

2 tbsp tahini, hulled

2 tsp Dijon mustard

Handful fresh coriander, roughly chopped

Glug Olive oil

Method

If the coconut oil is firm, give it 5 secs in the micro. Cover carrots with olive oil and spices. Roast in the oven for around 30 mins or until soft. Whack carrots in a food processor with remaining ingredients and whizz for 2 mins or until pureed (you may need to scrape down the sides a couple of times). Taste and add any extra olive oil, mustard or even a squeeze of lemon until you get the right flavour for your tastebuds.
